Chimichurri Sauce with Olive Oil and Oregano Balsamic Vinegar
Chimichurri sauce is an essential Argentinean condiment (typically made with parsley, oregano, vinegar, and garlic) and always accompanies any type of grilled meat. This fool-proof recipe can’t get any easier: throw all ingredients into a food processor and give it a whirl. Typical recipes have you make the chimichurri a day before serving in order to give the flavors a chance to meld. However, with our oregano-infused balsamic vinegar we were able to serve this delicious condiment immediately (we even had leftovers the next day and there was no difference in taste). Winter Slaw with Kale, Brussels Sprouts and Whole Herb Fennel Olive Oil Dressing
The base of this salad is just three ingredients: kale, radicchio and Brussels sprouts. The Brussels sprouts are chopped like little cabbages and the slightly bitter taste of radicchio blends well with sweet and tangy dried cranberries and the simple lemon and fennel vinaigrette. Slow Roasted Spiced Pork with Lime Olive Oil and Jalapeno Balsamic Vinegar
Cold and rainy days lend themselves to slow roasted dinners. This recipe was inspired by Ina Garten’s slow roasted spiced pork. It’s also great for entertaining since it can be prepared ahead of time so you spend the evening with your guests and not cooking in the kitchen. Penne Pasta and Garlic-Lemon Tuna Sauce with Capers and Parsley
A few years back we posted an easy mid-week pasta recipe that doesn’t require a lot of planning and uses ingredients that you probably already have on-hand (Penne Pasta with Tomato-Garlic Tuna Sauce and Mint). Here’s another variation from Cooks Illustrated that is just as easy and doesn’t skimp on flavor. You can prepare the sauce while the pasta is cooking and it all comes together in about 30 minutes from start to finish. Kale and Lentil Bowl with a Lemon Olive Oil and Avocado Dressing
Here’s another “bowl-full-of-healthy” salad recipe where we loved both the flavor and the simplicity. Adapted from Martha Stewart, the base of this dressing is our healthful lemon olive oil and a ripe avocado; add a few other simple ingredients and whip it up in a food processor. Lentils, kale, almonds and sprouts join the party to complete this nutritious and flavorful dish. We made things even easier by using vacuum-packed cooked lentils widely available in most supermarkets. This dressing has a “creamy” feel to it without all the bad fats so make more and use it to jazz up a simple side salad. Blood Orange Olive Oil Cookies
Here’s a quick and easy holiday cookie recipe that’s a little lighter than those butter-laden batters and also has a bright citrus note. We used our popular Blood Orange olive oil instead of butter and added the juice and zest of an orange to boost the orange flavor. Healthier Sweet Potato Casserole with Cinnamon Pear Balsamic and a Meringue Topping
Tradition calls for festive dishes like candied yams during the holidays but if you want a break from the butter-laden sweet potatoes smothered in overly sweet marshmallows we have an alternative that you will absolutely love. The inspiration came from a recipe we found on the Eating Well website but we tweaked it a bit using our own Butter Olive Oil. Additionally, this lighter healthier sweet potato casserole version gets a lot of its sweetness from crushed pineapple and our Cinnamon Pear balsamic vinegar. To top it off, we made an airy, lightly sweet meringue instead of the usual marshmallows. It was very easy to do; you can pipe it onto the casserole using a zipper-locking bag or just spread it on with a spatula.
