        Could something in your kitchen cabinet help you lose weight and prevent cancer? It’s something many people don’t associate with weight loss or even health.

        Some refer to this weight loss food as “liquid gold” because of its color and the fact that it’s rich in nutrients.

        A local research dietitian swears by this particular ingredient and has done local studies on its power to help us lose weight and prevent prostate and breast cancers.

        And here’s the irony: It’s high in fat.

        If you want to trim your waistline, try consuming at least three tablespoons a day of extra virgin olive oil.

        Mary Flynn, a registered dietitian and researcher at The Miriam Hospital, has the proof to back it up. She recently completed two weight loss studies. One looked at an olive oil plant-based diet to prevent breast cancer; the other to see if that same diet could prevent prostate cancer.

        “What we were looking at was when men are treated for recurrent prostate cancer, they’re treated very often with a therapy that blocks the testosterone. And when this happened it increased their risk factors for heart disease by increasing the metabolic syndrome, which is a large waist, an increase in the triglycerides, decrease in HDL, the blood pressure goes up and glucose goes up,” Flynn said.

        In all, 18 men took part in the plant-based olive oil diet. “I asked them to use at least three tablespoons a day, which I put as part of the meal plan and the recipes and then it focuses mainly on vegetables,” Flynn said.

        Vegetables in this Mediterranean-like diet are unlimited. Fruits are limited to about three servings a day, and whole grains are emphasized.

        “The beauty of the diet is the volume is large. So, your stomach is full and then you have the fat, the olive oil being used to prep the meal so you don’t get hungry between the meals. And so I see snacking go down,” Flynn said. Flynn found in this hospital-funded study that men not only lost weight, they embraced the new way of eating.

        She already knew women were benefiting. It’s what led to her publishing this book, “The Pink Ribbon Diet,” which was borne out of an earlier study of 44 overweight women diagnosed with invasive breast cancer.

        In that study, women who followed the plant-based olive oil plan lost weight and lowered their triglycerides — a type of fat found in the blood — and raised their good cholesterol.

        Despite its name, the book is for anyone trying to lower their weight and risk for disease.

        “It’s mainly a cookbook. It gives the rationale for why I choose the foods that I do, I think, as well as 150 very easy recipes,” Flynn said.

        The olive oil diet used in Flynn’s studies includes at least those three tablespoons of olive oil a day and a lot of vegetables. Red meat was not allowed, but limited amounts of poultry and fish were.

         

         

        Wild Smoked Salmon & Avocado Crostini

        Here’s a fresh appetizer that’s delicious with a single varietalĀ extra virgin olive oil orĀ substituteĀ our Wild Dill olive oil to add some variety.

        Ā Ingredients

        • 1 fresh, sweet baguette, sliced in to 1/2″ slices on the diagonal
        • 12 oz. thinly sliced wild smoked salmon
        • 3 ripe avocados, sliced thin
        • 1 small red onion, sliced very thin
        • 1 large garlic cloves cut in half
        • 2 tablespoons fresh squeezed lemon juice
        • 1/3 cup +2 tablespoons Olive This! Single VarietalĀ Extra Virgin Olive OilĀ  or Wild Dill Olive Oil
        • pinch of sea salt
        • fresh ground pepper
        • 1/4 cup flat leaf parsley, coarsely chopped

        Directions

        Whisk two tablespoon of lemon juice with 1/3 cup of olive oil and sea salt in a small bowl. Add the thinly sliced onions and toss to coat and set aside.

        Preheat the grill to medium or heat a grill pan on the stove top over medium-high heat. With a pastry brush, lightly brush both sides of each slice of bread with the single varietal olive oil. Place the bread on the grill and toast until light golden brown and grill marks appear, flipping once during the process (take care not to burn the bread).

        While the bread is still very warm, rub the cut garlic clove over both sides of the bread slice. Allow the bread to cool completely, then begin layering by adding a slice of avocado. Brush the sliced avocado with a small amount of the onion-lemon-olive oil mixture, and a grind of fresh pepper. Add the smoked salmon, and top with a few slices of marinated onions and a sprinkle of chopped parsley.

        Serve immediately

        Dark Chocolate Stuffed Blood Orange Cream Buns

        These chocolate stuffed buns are a treat for dessert or breakfast. Take note, the dough needs to go in the fridge overnight so plan ahead – well worth the wait!

        Ingredients:

        • 3 teaspoons active dry yeast
        • 3 1/2 cups flour
        • 1 1/2 teaspoons salt
        • 1/3 cup lukewarm cream or half & half
        • 1/3 cup warm lukewarm water
        • 2 large eggs
        • 1/3 cup sugar
        • 1/2 cup Olive This! Whole FruitĀ Blood Orange Olive OilĀ 
        • 1 teaspoon fresh grated orange zest
        • 16 – 1″ chunks of dark chocolate or 5-6 dark chocolate morsels for each bun
        • 1 egg beaten for glazing the buns

        Sweet Orange Glaze

        • 1 cup (4 ounces) confectioners’ sugar
        • 1 tablespoons half and half
        • 1 tablespoon fresh orange juice

        DIRECTIONS:

        Follow the directions for your bread machine, or place the warm water, half and half, eggs, sugar, blood orange olive oil, and yeast in bowl of standing heavy-duty mixer; stir until yeast dissolves. Fit mixer with dough hook. Add flour, zest, and salt to bowl and mix on low speed just until flour combined, about 10 seconds. Scrape down the sides of the bowl and increase the speed to medium and beat until dough comes together, about 3 minutes.

        Cover bowl with plastic wrap. Let the dough rise at room temperature until almost doubled in volume, about 1 hour. Gently deflate the dough and cover bowl with plastic; chill dough overnight.

        Line a baking sheet with parchment paper. Divide dough into 4 equal pieces. Make a short log from each piece and cut each log into 4 equal pieces. Roll each piece into a bun. Gently push a 1/2″ piece of dark chocolate in the center of each bun and pinch the bottom of each bun to seal securely. Arrange the buns about an inch apart, pinched side down on the prepared sheet pan and allow to rise, covered, for 1 hour.

        Preheat oven to 375°F. Gently brush top of the buns with the beaten egg glaze. Bake until buns are golden brown and fragrant, about 25 minutes. Allow the buns to cool for 5 minutes.
        For Sweet Orange Glaze, mix together the orange juice, half and half, and confectioners’ sugar. Brush each bun with glaze. Serve warm while the chocolate is still molten in the center.

        Slow Braised Lamb Shanks With A Malbec Wine Reduction

        This hearty recipe for lamb shanks can be prepared in your dutch oven or crock pot.

        INGREDIENTS

        • Four lamb shanks
        • 1/2 cup flour
        • 1 tablespoon kosher salt
        • fresh ground pepper to taste
        • four inch sprig of rosemary, woody stems discarded
        • 4 cloves fresh garlic, minced
        • 1 medium onion minced
        • 1 large carrot, finely diced
        • 1/3 cup Olive This! Single Varietal Ultra Premium Extra Virgin Olive Oil
        • 3 cups robust red wine such as Malbec
        • 1 cup water

        PREPARATION

        If using the oven, preheat to 300. In a wide shallow dish or a gallon size zipper-lock bag, mix the flour, salt and pepper. Rinse and pat the lamb shanks dry and dredge in the flour. In a large heavy bottom pan, heat the olive oil over medium-high heat, and brown the lamb shanks until golden brown on all sides, taking care not to over crowed the pan, cooking for about 5 minutes per side and set aside.

        In the same pan, add all of the vegetables and saute over medium heat, scraping up any browned bits, until the onions are translucent, for approximately five minutes. Pour in the wine and simmer for another couple minutes and then add cup of hot water. Add the fresh rosemary to the bottom of the crock pot or dutch oven and arrange the shanks on top. Pour the wine and vegetables over the top. Cook, covered in a heavy dutch oven for six hours or in a crock pot set on low.

        After six hours, carefully remove the shanks from from the liquid taking care not to allow the meat to slip off the bones. Cover to keep warm. Strain and de-fat the braising liquid. Place in a small saucepan and reduce by half. Adjust the seasoning with sea salt and fresh ground pepper. Pour the reduction over the lamb shank placed atop a bed of mashed potatoes made with Olive This! Butter Extra Virgin Olive Oil.
