Spicy Calabrian Pesto Pasta Chips

This Tik Tok trending recipe of pasta chips turned out fantastic. If you have an air fryer it’s quite simple. Take cooked pasta, season it and crisp in the air fryer. The secret to great pasta chips is in the seasoning and the choice of oil. We used Spicy Calabrian Pesto olive oil which is packed full of flavor. Another great option would be the Smoked Olive Oil or Tuscan Herb.

This recipe is great if you have left over pasta. If not cook a new batch using any shape. The Olive This! secret to great marinara sauce is dark chocolate balsamic vinegar. Instead of the teaspoon or two of sugar traditionally found in marinara recipes, we use chocolate balsamic vinegar. It adds sweetness and depth along with a bit of twang to balance the tomatoes.

Pasta Chips

Marinara Dipping Sauce

  • 1 can (16 ounces) crushed tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 tablespoon Hidden Valley Ranch Seasoning
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1-2 tablespoons Olive This! Dark Chocolate Balsamic Vinegar

Directions

First cook the pasta al dente. Depending upon which type of pasta you select this should be about 9 minutes. If you have left over cooked pasta then you can skip this step.

While the pasta is cooking begin making the marinara sauce. Add all of the sauce ingredients to a sauce pan. Bring it to a boil and then reduce to low to simmer for at least 30 minutes while you are preparing the chips. Note that this recipe makes more marinara than you will need for your chips.

In a large bowl add the pasta, olive oil, seasonings and Parmesan cheese. Toss well to coat evenly. Add more seasonings to your own personal taste. I find that each piece needs to feel slightly over seasoned prior to air frying.

Place approximately a third of the pasta in the air-fryer. Air fry (crisp) for 10 minutes at 400 degrees. About half way shake or stir the crisping pasta. Cook until your desired level of doneness. I prefer more crispy.

Serve with the marinara dipping sauce. Enjoy!
