All across the internet food bloggers are posting harvest salad recipes to take advantage of the hearty root vegetables available now. This one is my take. The main differentiator is that I do not add sugar to my vinaigrette. I am using Pomegranate balsamic vinegar instead. This naturally tart, sweet balsamic balances the earthy quinoa and hearty vegetables giving it the right amount of zing. Continue reading “Pomegranate Harvest Quinoa Salad”
Rosemary Olive Oil Focaccia Bread
Focaccia bread is a great beginner’s bread for those of us who may be intimidated by yeast breads. It comes together easily with the help of a stand mixer and requires very little hand manipulation except for poking. No kneading. It also happens to be one of my favorite breads. Blood Orange Olive Oil Tart
Cook’s Illustrated took a traditional lemon curd tart recipe and substituted the butter for olive oil. We then took their recipe tweaked it a bit more and used a blood orange fused olive oil. You’ll find that this recipe is quite delicious from the soft orange flavor in the cookie crust to the sweet and tangy orange curd. The recipe is simple and comes together quite easily. We made it with fresh blood oranges and our blood orange olive oil, but Persian lime olive oil with fresh limes or our whole fruit lemon olive oil with fresh lemons would also be great choices. The most important point is the tart pan. You must have a 9 inch, removable bottom tart pan.
Caesar Salad Dressing
Caesar dressing can seem very mysterious, especially with the anchovies. But this recipe demonstrates how quite simple it truly is. The key to making the dressing is using quality ingredients. Here I’ve used Madagascar Black Pepper to add a subtle pepper flavor to the dressing, but garlic olive oil, lemon olive oil or any single varietal would also be great choices. Rustic Easy Tomato Sauce
What do you do with all the summer tomatoes? Make sauce of course! This recipe is incredibly easy and incredibly adaptable. It also makes enough to freeze for another meal another night. It is my adaptation of an old Martha Stewart recipe. I used Tuscan Herb olive oil, but the Garlic or Milanese Gremolata olive oils would also be amazing. Likewise for the balsamic vinegar I suggest using Oregano, Neapolitan or even Jalapeno to add a spicy kick. Continue reading “Rustic Easy Tomato Sauce”

Fresh Strawberry Pie with Cara Cara Orange Vanilla Balsamic
This pie is perfect for anytime you have an abundance of fresh strawberries on hand, especially at the beginning of the season. Fresh strawberry pie recipes are passed down in families and found in abundance on the internet. The general basis of this pie involves macerating the strawberries in sugar. Here in the Olive This! kitchen we prefer to use our aged balsamics to macerate and thus highlight the berries with a complementary naturally flavored balsamic. Today we have used Cara Cara Orange Vanilla but the Tangerine or Sicilian Lemon would also be an ideal choice. Many versions use gelatin to help the pie set up. We prefer using smashed strawberries with a bit of cornstarch instead of the gelatin. Enjoy! Continue reading “Fresh Strawberry Pie with Cara Cara Orange Vanilla Balsamic”
