Spicy Grilled Watermelon Salad

This grilled watermelon salad is a guest post from Harpreet at All Things Preet. She’s a food & lifestyle blogger from Charlotte who happened into our store one day. She has a lovely Instagram feed where she’s always putting together the most beautiful dishes and most interesting recipes. Harpreet is very passionate about wellness and nutrition. After a quick conversation and mulling around our store sampling pairings she was motivated to whip up something spectacular.

“This salad delivers a fresh, spicy, and citrusy punch all with the help of my newest obsession, Harissa olive oil and Key Lime white balsamic vinegar – it’s a combo that’s almost amazing on anything! This salad is a perfect side to compliment any of your favorite labor day grilled entrees!”⠀

Ingredients

Directions

Preheat your grill to 450 degrees. Cut the feta cheese and watermelon into 1 inch cubes.  Use a mandolin and slice the cucumbers and red onions on the thinnest setting possible.⠀
Brush Harissa olive oil over all sides of the watermelon and feta cubes. Grill the watermelon cubes 4 min on the top and bottom sides.
Place the grilled watermelon and feta over a bed of your favorite spring greens or arugula. Sprinkle cucumbers and red onions on top. Garnish with freshly chopped basil.⠀
To make the dressing shake equal parts Harissa olive oil and Key Lime white balsamic vinegar together. Lightly drizzle over the salad and serve.⠀
