Savory Thyme Pumpkin Quick Bread

Among my friends I’m know for a couple signature baked goods. One such recipe is my pumpkin bread which was handed down from my grandmother. While the original recipe appeared in Southern Living in the 70’s, she adapted it over the years before passing it to me.

Today I share with you my recipe with a new twist.  Everyone has their go-to pumpkin bread, but this uniquely Olive This! Pumpkin Bread will escalate it to the next level. Why make another sweet quick bread when you can surprise your taste buds with savory hint. I have used the Fused Whole Herb Thyme Olive Oil in the recipe to bring out more earthy savory tones which complement the pumpkin and pumpkin spices.

RECIPE UPDATE: Since we no longer carry Thyme Olive Oil I have replaced it with Herbes de Provence Olive Oil in this recipe which is a blend of Fennel, basil, bay leaf, thyme and lavender. Wow! I think I like the bread even better using this blend of spices. .

Ingredients

  • 2 cups sugar
  • ¾ cup Olive This! Herbes de Provence Olive Oil
  • 4 eggs
  • 1 (16 oz) can pumpkin
  • 3 1/3 cup flour
  • 2 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 teaspoons vanilla extract

Directions

Combine sugar and Olive This! Infused Thyme Extra Virgin Olive Oil.

Add eggs one at a time, mixing well. Next stir in the pumpkin.

Combine the next seven dry ingredients. Whisk until blended. Add the flour mixture to the pumpkin mixture alternating with 2/3 cup water. Begin and end with the flour mixture. Stir in the vanilla extract next.

Spoon the batter into two lightly greased 9x5x3 inch standard loaf pans. Bake at 325 degrees for 1 hour 10 minutes or until a toothpick in the center is clean. Cool bread in the pans for 10 minutes. Remove from pans and cool on wire racks.
