Although summer is almost over there will still be a few more hot days before fall. With this in mind we thought we would create a refreshing desert recipe to share. This recipe couldn’t be any easier and utilizes our brand new Key Lime White Balsamic. This Coconut Lime Sherbet requires only 2 ingredients and an ice cream maker. It needs no extra sugar or artificial sweeteners.
- 1 can coconut milk
- ½ cup Olive This! Key Lime White Balsamic Vinegar
- zest of 1 lime (optional for garnish)
Thoroughly whisk the balsamic vinegar into the coconut milk. Coconut milk will separate in the can and can be lumpy so it is important that it is well blended to ensure the right consistency for the ice cream maker.
Pour into the ice cream maker and freeze following manufacturers instructions. Typically this one will take approximately 30 minutes. You can immediately serve or if desired transfer sherbet into airtight container and place into freezer until firm, about 2 hours.
